Salmon with Avocado Sauce

Salmon fillets
1 large avocado
2 tbsp lime juice
1/2 tsp dijon mustard
2 green onions, minced
2-4 tbsp olive oil
salt to taste

Score the avocado just to the skin and spoon out into a food processor.

Add the lime juice right away to prevent browning, then add the onions and mustard.  Pulse until mixed then slowly stream in the olive oil until it has the desired consistency.  Add salt as desired.

I don't know why I don't have any salmon pictures, but searing the fillets is super easy.  Most importantly you want to pat the fish completely dry.  Heat some oil in a large pan over medium high heat until hot, but not smoking (use just enough to cover the bottom).  Season one side of the fillet and place that side down into the oil.  Season the other side.  Cook 3-4 minutes on each side or until opaque.

The flavors of the lime and avocado pair perfectly with the salmon.  You may want to double the recipe.
